Cream Cheese Rhubarb muffins

- 11/2 cups brown sugar shopping list
- 1/2 cup oil shopping list
- 1 egg shopping list
- 2 tsp vanilla shopping list
- 1 cup buttermilk shopping list
- 1 1/2 cups diced rhubarb shopping list
- 2 1/2 cup flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- Topping: shopping list
- 1 tbsp butter shopping list
- 1/2 tsp sugar shopping list
- 1 tsp cinnamon shopping list
- Filling: shopping list
- 1 8 oz pkg cream cheese shopping list
- 3 tbsp sugar shopping list
How to make it
- preheat oven 400*
- prepare topping set aside
- Prepare filling set aside
- Combine dry ingredients and toss in diced fruit make a well in center
- In smaller bowl beat together egg , vanilla, milk, and oil
- Pour into well stir until just moistened 10 - 15 strokes
- Pour half of batter into lined muffin cups
- divide among cups cream cheese filling on top of batter
- top with rest of batter
- Sprinkle with topping
- Bake 20 minutes
