Grilled Veggies my way

- Serves 4
Fresh veggies mixed together and grilled to perfection
Ingredients
- 5 medium yukon gold potatoes- diced shopping list
- 1 medium green pepper - chopped shopping list
- 2 cloves fresh garlic - chopped shopping list
- 2 shallots - chopped shopping list
- 2 cups fresh broccoli florets shopping list
- 4 cups fresh spinach shopping list
- 1/2 cup olive oil shopping list
- 1TB tastefully simple southwest seasoning salt shopping list
- sea salt and pepper to taste shopping list
How to make it
- In a large mixing bowl add all ingredients and mix to get all veggies coated with olive oil add extra if needed.
- Pour into a disposable aluminum pan or other grill safe dish. cover with foil.
- grill at 400 for 30 mins.
