White Sugar Rice Pudding Cake Recipe

Here is another chinese bakery delight. It is a flourless, sweet, chewy rice cake. Cut into smaller cubes could put in a buffet table.

Ingredients
  • 100 g rice flour, sifted
  • 80 g white sugar
  • 200 ml water
  • ½ tsp active dry yeast
  • ½ tbsp lukewarm water
  • ¼ tsp baking powder

Directions
  1. Mix rice flour, water and sugar together in a mixing bowl.
  2. In a nonstick pan, cook over low heat until the mixture has thickened.
  3. Keep stirring to avoid any lump during cooking.
  4. Strain mixture and cool.
  5. Mix the yeast and warm water and add in the cooled rice mixture together with the baking powder.
  6. Rest for 6 or 8 hours at the room temperature.
  7. Grease a 6 inch steamer with vegetable oil and line with foil and pour in the rice mixture.
  8. Steam over the high heat with boiled water for about 20 minutes.
  9. Cool, remove and cut into wedges

Sounds good... do you use regular white rice flour or sweet rice flour??? ^5


There is a chinese bakery in Seattle that sell these. They are very good and not too sweet. Nice little treat every now and then. Thanks for posting Daria!
