TEX MEX FAJITAS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.

Ingredients
  • 2 tablespoons olive oil
  • 4 cups lean steak strips
  • 1 tablespoon chipotle pepper
  • 1 cup thinly sliced green bell peppers
  • 1-1/2 cups thinly sliced white onions
  • 1 tablespoon minced garlic
  • 2 tablespoons lemon juice
  • 10 large flour tortillas
  • 2 cups salsa
  • 1 pint sour cream
  • 2 cups shredded extra sharp cheddar cheese
  • 1 teaspoon salt

Directions
  1. Put olive oil and garlic in preheated wok.
  2. Stir fry steak then add salt and cook until it is almost done.
  3. Add onions, peppers, juice and chipotle then cook until onions and peppers are limp.
  4. When finished pour into bowl and prepare fajitas on tortillas with salsa, sour cream and cheese.
