How to make it

  • Mix the first 6 ingredients, gently
  • season with salt and pepper
  • fold in the egg until sticky
  • form the mixture into cakes
  • refrigerate for 1-2 hours
  • coat the cakes with crumbs
  • pan fry in oil about 4 minutes on each side until golden brown.
  • Dallop the cilantro lime sauce alongside each cake
  • To make the sauce combine the last 6 ingredients, stir well and refrigerate until chilled and thickened.
