Lemon Creamcheese Cupcakes

- 12 vanilla wafers shopping list
- 2 eggs shopping list
- 2 tsp vanilla extract shopping list
- 1 c sugar shopping list
- 2 (8oz) packages of Philadelphia cream cheese shopping list
- lemon zest from one Lemon shopping list
- Homemade Blueberry Topping (Optional) shopping list
How to make it
- Preheat oven to 350 degrees F
- Use cupcake liners and line 12 cupcake tins
- Put a Vanilla Wafer, flat side down, in each one and set aside
- In medium bowl, put both packages of Cream Cheese (make sure it's room temp and soft) and beat with hand mixer until creamy
- Add Vanilla and Sugar, blend with mixer
- Add one Egg, blend well
- Add second Egg and blend well
- Zest one Lemon, about 2 tbsp, and stir into cream cheese mixture
- Put 1/4 c mixture in each cupcake tin, over cookie
- (If using blueberry topping, spoon on top of cream cheese)
- Bake in the oven for 40 minutes or until top is golden brown
- Remove and let them cool completely
- Serve and Enjoy!
