Ingredients

How to make it

  • Boil potatoes until tender but not mushy
  • After the potatoes cool, then peel, slice, and put in a serving bowl
  • Cook the bacon in a skillet until crisp
  • Remove the bacon and drain on a paper towel
  • Saute the onion in the bacon fat until tender
  • Add the vineagar, sugar, salt, pepper, and mustard seeds
  • Cook for 2 minutes
  • Pour over the potaoes and toss gently
  • Sprinkle or gently fold in the parsley
