CHOCOLATE AND SEA SALT COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 3 cups chocolate chips
  • 1/4 cup unsalted butter at room temperature
  • 3/4 cup brown sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla extract
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1-1/2 cups chopped walnuts
  • Sea salt

Directions
  1. Place 1-1/3 cups chocolate chips in a bowl and melt over a double boiler.
  2. Meanwhile whisk together eggs and vanilla extract then set aside.
  3. Sift together flour and baking powder then set aside.
  4. Once chocolate has melted stir in butter until completely incorporated.
  5. Add brown sugar, egg and vanilla mixture mixing well.
  6. Add flour mixture and mix until smooth.
  7. Stir in remaining chocolate chips and chopped walnuts.
  8. Refrigerate at least 2 hours or overnight then preheat oven to 350.
  9. Scoop dough onto greased baking sheet using a small ice cream scoop.
  10. Flatten with the palm of your hand and sprinkle generously with sea salt.
  11. Pat salt in gently then bake on middle rack of oven for 14 minutes.
  12. Remove from oven then rest on cookie sheet 5 minutes then transfer to rack and cool.
