Microwave Sugar Spiced Pecans

- 1 cup sugar shopping list
- 1/3 cup evaporated milk shopping list
- 1/2 teaspoon cinnamon shopping list
- 1 1/2 tablespoons butter shopping list
- 1 1/2 cups pecan halves shopping list
- 1/2 teaspoon vanilla extract shopping list
How to make it
- Mix all but pecans and vanilla extract in a LARGE microwave safe bowl. ( I use an 8 qt measuring cup ) The mixture really boils up high once it's hot.
- Microwave on high for 6 or 7 minutes, stirring every 2 or 3 minutes. You can usually tell it's getting close to the soft ball stage when it tends to stop bubbling and rising as it was earlier.
- Remove from microwave, stir in nuts and vanilla extract. It usually hardens up really quick for me, but if you feel it's too runny of a mixture you can beat it with a spoon for a few seconds.
- Drop quickly onto wax paper, seperating the halves as much as possible.
- Allow to cool completely and store in air tigfht containers or jars.
