Ingredients
  • 1 cup sugar
  • 1/3 cup Evaporated Milk
  • 1/2 teaspoon cinnamon
  • 1 1/2 tablespoons butter
  • 1 1/2 cups pecan halves
  • 1/2 teaspoon vanilla extract

Directions
  1. Mix all but pecans and vanilla extract in a LARGE microwave safe bowl. ( I use an 8 qt measuring cup ) The mixture really boils up high once it's hot.
  2. Microwave on high for 6 or 7 minutes, stirring every 2 or 3 minutes. You can usually tell it's getting close to the soft ball stage when it tends to stop bubbling and rising as it was earlier.
  3. Remove from microwave, stir in nuts and vanilla extract. It usually hardens up really quick for me, but if you feel it's too runny of a mixture you can beat it with a spoon for a few seconds.
  4. Drop quickly onto wax paper, seperating the halves as much as possible.
  5. Allow to cool completely and store in air tigfht containers or jars.
