Cheddar Cheese Truffles Recipe

Ingredients

2 cups shredded sharp cheddar cheese

1/4 pound cream cheese

1/4 cup softened butter

1/4 cup dry sherry

1 teaspoon grated orange rind

1/4 teaspoon dry mustard

1/4 teaspoon nutmeg

1-1/2 cups finely chopped toasted almonds

Directions

In food processor combine first 7 ingredients and process until smooth.

Cover and refrigerate for several hours.

Spread almonds on plate.

Drop rounded teaspoonfuls of cheese mixture into almonds and roll to coat and form balls.

Place in fluted candy papers then cover lightly and refrigerate until ready to serve.
