Lemon Shortbread Bars Recipe

Dense and chewy and laced with lemon,these may be the best shortbread bars you have ever had.

Ingredients
- 3 c. flour
- 1 c plus 1 Tbs sugar,divided
- 2 Tbs grated lemon peel
- 1 tsp salt
- 11/2 c unsalted butter,softened,cut up
- 1 Tbs lemon juice
- 2 tsp vanilla
Directions
- Heat oven to 350. Line a 13x9" baking pan with foil;spray foil with cooking spray. Whisk floiur,1 cup of sugar,lemon peel and salt in large bowl.
- With pastry blender or 2 knives,cut in butter until mixture resembles coarse crumbs.. Stir in lemon juice and vanilla. Press dough into pan;sprinkle with remaining 1 Tbs sugar.
- Bake 35 to 40 mins or till edgrs pull away from sides of pan and top is golden brown. Cool on wire rack.
