Mexican Coffee Liqueur Cookies Recipe
this recipe sounded good ... I don't really know why they are called Mexican..I am sorry I do not remember where I found this recipe

Ingredients
  • 1/2 c Butter
  • 1/2 c Cream
  • 2/3 c Maple syrup
  • 1/2 c Kahlua
  • 1 ts Vanilla
  • 1 ea Egg
  • 2 c White Flour
  • 1 ts Baking Soda
  • 1/2 c Oats
  • 1/2 c Nuts
  • 1 1/2 c mint chocolate chips

Directions
  1. Cream together butter, cream, maple syrup, Kahlua and vanilla. Stir in egg. Add flour in three additions, making sure each addition is thoroughly mixed. Add baking soda and oats. By hand, stir in nuts and mint chips.
  2. Drop by teaspoonfuls on an unoiled cookie sheet.
  3. Bake at 350 degrees 10-12 minutes. Cookies will be golden brown. Makes 48 cookies
