Reuben Sandwich Casserole

- 1-32ounce jar sauerkraut, rinsed and drained well (squeeze out extra moisture) shopping list
- 1/2 cup chopped onion shopping list
- 1/4 cup chopped parsley shopping list
- 2 teaspoons caraway seed shopping list
- 4 cups shredded reduced-fat swiss cheese (16 ounces) shopping list
- 1-1/3 cups fat free Thousand Island salad dressing shopping list
- 1 lb. thinly sliced turkey pastrami; coursly chopped shopping list
- 1/2 cup light margerine shopping list
- 6 slices light Rye bread; cut into 1/2 inch cubes (approx. 5 cups) shopping list
How to make it
- In a large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed.
- Spoon mixture into a 13 by 9 in. baking dish, sprayed with Pam, spread the mixture evenly.
- Layer with half of the cheese, half of the salad dressing and all of the meat.
- Layer with the remaining salad dressing and cheese.
- In a large skillet, melt the margarine. Add the bread cubes and stir until coated. Sprinkle bread cubes over the top of the casserole.
- Bake in a 350 degree oven for 35 min. or until heated through and bread cubes are browned.
