Reuben Sandwich Casserole Recipe
This is a Reuben that you eat with a fork. I have reduced the fat, and calories, so enjoy without the guilt.

Ingredients
  • 1-32ounce jar sauerkraut, rinsed and drained well (squeeze out extra moisture)
  • 1/2 cup chopped onion
  • 1/4 cup chopped parsley
  • 2 teaspoons caraway seed
  • 4 cups shredded reduced-fat Swiss cheese (16 ounces)
  • 1-1/3 cups fat free Thousand Island salad dressing
  • 1 lb. thinly sliced turkey pastrami; coursly chopped
  • 1/2 cup light margerine
  • 6 slices light Rye bread; cut into 1/2 inch cubes (approx. 5 cups)

Directions
  1. In a large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed.
  2. Spoon mixture into a 13 by 9 in. baking dish, sprayed with Pam, spread the mixture evenly.
  3. Layer with half of the cheese, half of the salad dressing and all of the meat.
  4. Layer with the remaining salad dressing and cheese.
  5. In a large skillet, melt the margarine. Add the bread cubes and stir until coated. Sprinkle bread cubes over the top of the casserole.
  6. Bake in a 350 degree oven for 35 min. or until heated through and bread cubes are browned.
