Spinach Artichoke Dip With Mango Recipe

Ingredients
  • One 8 oz. package of organic cream cheese
  • Two large globe artichokes leaves removed
  • Three ounces of baby spinach
  • One ripe mango peeled and diced
  • Two tablespoons lemon juice divided
  • A pinch of salt to taste

Directions
  1. Boil artichokes in water with tablespoon of lemon juice.
  2. In the mean time, in a food processor, add spinach and tablespoon of lemon juice and pinch of salt, diced mango and pulse to combine.
  3. Remove artichoke from boiling water and dice; add to processor with cream cheese and pulse to combine.
  4. Serve with pita chips or crusty bread.
