Lightly Lime Pasta Salad

- SALAD shopping list
- 7 oz uncooked small pasta shells shopping list
- EVOO shopping list
- kosher salt shopping list
- 11/2 c seedless green grapes shopping list
- 11/2 c cantalope cubes shopping list
- 2 bananas shopping list
- 2 c halved fresh strawberries shopping list
- DRESSING shopping list
- 1/2 c sour cream (or lowfat sour cream) shopping list
- 3 T thawed limeade concentrate shopping list
- 1/8 t salt shopping list
How to make it
- Cook pasta in water salted with generous pinches kosher salt and EVOO, until al denta
- Drain well and rinse pasta with coold water to cool
- Drain well
- ** Cut bananas into small bowl and drizzle with juice from the lemon to prevent browning
- Meanwhile in large bowl mix grapes, canataloupe and bananas
- In small bowl mix dressing ingredients until well belnded
- Gently stir cooled cook pasta and dressing into salad
- Gently stir in strawberries
- ** I always drain a can of pineapple, packed in it's own juice, and cut any bananas or apples that I am using into that juice. It's works better than lemon to prevent browing, and I take the pineapple in my lunch, etc.
