How to make it

  • Cook pasta in water salted with generous pinches kosher salt and EVOO, until al denta
  • Drain well and rinse pasta with coold water to cool
  • Drain well
  • ** Cut bananas into small bowl and drizzle with juice from the lemon to prevent browning
  • Meanwhile in large bowl mix grapes, canataloupe and bananas
  • In small bowl mix dressing ingredients until well belnded
  • Gently stir cooled cook pasta and dressing into salad
  • Gently stir in strawberries
  • ** I always drain a can of pineapple, packed in it's own juice, and cut any bananas or apples that I am using into that juice. It's works better than lemon to prevent browing, and I take the pineapple in my lunch, etc.
