Ingredients

8 6" corn tortillas

11/2c seeded,chopped tomato

1c seeded,chopped cucumber

1/3c thinly sliced scallion

1/4c chopped cilantro3Tbs fresh lime juice

1/4 tsp salt

8oz.green beans ,trimmed

1tsp fajita seasoning

1lb. large shrimp,peeled and deveined

1tbs. olive oil

Directions

Heat oven to 350. Wrap tortillas in heavy foil,heat 10 mins. Meanwhile,for salsa,combine tomato,cucumber,scallion,cilanto.lime juice and salt;set aside

In a bowl,toss beans with 1/2tsp fajita seasoning.In another bowl,toss shrimp with 1/2 tsp of seasoning. Heat oil in large skilet over med-high heat . Add beans and cook,stirring,3 mins. Add shrimp and cook,stirring,3 mins. more or till shrimp are opaque.

Assemble tacos: Divide shrimp-and-bean mixture between warm tortillas.Serve with salsa.
