Popcorn-crusted Catfish

- 1 pound of catfish nuggets or fillets shopping list
- salt shopping list
- Freshly ground black pepper shopping list
- 2 cups air or pan popped popcorn (not microwave) shopping list
- 1/3 cup flour, preferably whole wheat pastry flour shopping list
- 1 large egg shopping list
- 1/8 teaspoon cayenne pepper shopping list
- vegetable oil shopping list
How to make it
- Season the catfish with salt and pepper to taste
- In a spice grinder, blender or food processor, grind the popcorn to a medium fine meal. You should have about 1 1/3 cups
- Stir in 3/4 teaspoon salt
- Spread the ground popcorn on a plate
- Spread the flour on another plate
- Beat the egg in a shallow bowl,blend in the cayenne pepper
- Press each piece of catfish into the flour to coat both sides
- Gently shake off excess flour
- Dip into egg mixture, then coat both sides thoroughly with the ground popcorn
- Set the coated fish on a platter
- Pour a thin slick of oil into a large nonstick skillet and heat over high heat almost until smoking
- Cook the catfish, in batches if necessary, until the coating is brown and crisp and the inside flakes easily at the thickest part, about 2 minutes per side.
- Serve immediately
