How to make it

  • Season the catfish with salt and pepper to taste
  • In a spice grinder, blender or food processor, grind the popcorn to a medium fine meal. You should have about 1 1/3 cups
  • Stir in 3/4 teaspoon salt
  • Spread the ground popcorn on a plate
  • Spread the flour on another plate
  • Beat the egg in a shallow bowl,blend in the cayenne pepper
  • Press each piece of catfish into the flour to coat both sides
  • Gently shake off excess flour
  • Dip into egg mixture, then coat both sides thoroughly with the ground popcorn
  • Set the coated fish on a platter
  • Pour a thin slick of oil into a large nonstick skillet and heat over high heat almost until smoking
  • Cook the catfish, in batches if necessary, until the coating is brown and crisp and the inside flakes easily at the thickest part, about 2 minutes per side.
  • Serve immediately
