Ingredients
  • 1 pound of catfish nuggets or fillets
  • Salt
  • Freshly ground black pepper
  • 2 cups air or pan popped popcorn (not microwave)
  • 1/3 cup flour, preferably whole wheat pastry flour
  • 1 large egg
  • 1/8 teaspoon cayenne pepper
  • vegetable oil

Directions
  1. Season the catfish with salt and pepper to taste
  2. In a spice grinder, blender or food processor, grind the popcorn to a medium fine meal. You should have about 1 1/3 cups
  3. Stir in 3/4 teaspoon salt
  4. Spread the ground popcorn on a plate
  5. Spread the flour on another plate
  6. Beat the egg in a shallow bowl,blend in the cayenne pepper
  7. Press each piece of catfish into the flour to coat both sides
  8. Gently shake off excess flour
  9. Dip into egg mixture, then coat both sides thoroughly with the ground popcorn
  10. Set the coated fish on a platter
  11. Pour a thin slick of oil into a large nonstick skillet and heat over high heat almost until smoking
  12. Cook the catfish, in batches if necessary, until the coating is brown and crisp and the inside flakes easily at the thickest part, about 2 minutes per side.
  13. Serve immediately
