Mixed Vegetable Pakora Recipe

Ingredients
  • 1 cup chopped, fresh spinach
  • 1/2 cup onion, cut in 1/2" pieces
  • 1/2 cup Potato, peeled and cut in 1/2" small pieces
  • 1 tsp ajwain seeds (carom seeds)
  • 1/2 cup water
  • 1 cup Besan /Chickpea flour
  • 1.5 tsp salt
  • 1/2 tsp red chillies
  • Other:
  • 2 cups oil for frying
  • one wok like shallow pan for frying
  • One big mixing bowl

Directions
  1. 1. Mix all of the ingredients together in a big bowl
  2. 2. Add 2 cups oil to wok
  3. 3. Set to medium heat and proceed to step 4 after oil is ready for frying
  4. 4. Using a long spoon put 1 tbsp of the vegetable mixture into the oil to fry; turning frequently
  5. Note: Depending on the size of your wok, 10-12 Pakoras can be fried at the same time
  6. 5. Fry till golden brown.
  7. 6. Serve hot with mint/ coriander chutney or ketchup.
