Vegetable Pickle Soup - Gaeng Jued Pakk

- 1 tb oil shopping list
- 4 Minced cloves garlic shopping list
- 4 c water shopping list
- 1 lb pork ribs Cut In 2" Pieces shopping list
- 1 lb Chinese mustard pickles or any vegie that you want. I prefer spinach, watercrass, bitter melon, dicon, or any squash. shopping list
- 1/4 c fish sauce (Nam Pla) shopping list
- 1/4 ts white pepper shopping list
- 1 cup celery cut into long slice shopping list
- 1/2 cup of chop celanto / leave some for garnish shopping list
- 1/2 cup tufu cut into small cubes shopping list
- mustard pickles are available from Asian food stores shopping list
- THIS SOUP IS ALSO GOOD WITH CATFISH.. IF fish IS USE.....ADD lemon juice TO SOUP.. shopping list
How to make it
- Heat a small skillet and add the oil. Stir-fry the garlic until golden brown ( removed some for garnish) add celery , celanto and pork ribs cook it about 10 min. add water to the pork ribs. Cover and simmer for 30 mintues or until pork are tender. Mix in the Chinese mustard pickle pieces or any vegie, the fish sauce, tofu and the pepper, cook about 10 minutes more. Remove to a serving bowl and top with the fried garlic and celanto.
