Peanut Crusted Chicken With Pineapple Salsa

Pick up a container of fresh pineapple in the produce section of the market;chop in 1/2" pieces. Great flavors in this chicken dish.
Ingredients
- 1c fresh chopped pineapple shopping list
- 2Tbs fresh chopped cilantro shopping list
- 1Tbs finely chopped red onion shopping list
- 1/3c unsalted,dry-roasted peanuts shopping list
- 1 (1oz) slice white bread shopping list
- 1/2tsp salt shopping list
- 1/8tsp black pepper shopping list
- 4 (4oz) chicken cutlets shopping list
- 11/2tsp canola oil shopping list
- cooking spray shopping list
- cilantro sprigs shopping list
How to make it
- Combine first 3 ingredients in a small bowl;tossing well.
- Combine peanuts and bread slice in food processor;process till finely chopped. Sprinkle salt and pepper evenly over the chicken. Gredge chicken in bread crumb mixture.
- Heat oil in large non-stick skillet over med-high heat Cot pan with cooking spray. Add chicken to pan;cook 2 mins each side or till done. serve chicken with pineapple salsa. Garnish with cilantro sprigs.
