How to make it

  • Wash and trim ends off the cucumber, no need to peel.
  • Cut cucumber into thirds.
  • Chop 2/3 and dice 1/3 of cucumber (diced will be for garnish).
  • Cut avocado in half and remove pit and skin.
  • Chop green onions into 1" pieces.
  • Add chopped cucumber, avocado, green onions and mint to blender.
  • Pour in buttermilk and water (plain yogurt or sour cream can be substituted for buttermilk).
  • Blend until smooth, about 2 minutes.
  • Season with salt and pepper.
  • Chill for up to 3 hours before serving.
  • Garnish with diced cucumber.
