Fresh Strawberry Pie

- 6 cups of strawberries (fresh) shopping list
- 1 cup sugar shopping list
- 2 tbsp corn starch shopping list
- 1/4 cup water shopping list
- 1/4 cup Fresh lemon juice shopping list
- 1 package of Philadelphia cream cheese shopping list
- lemon zest from Medium Lemon shopping list
- ****Very Simple Pie Crust**** shopping list
- 2 cups flour shopping list
- 1/2 cup Veg oil shopping list
- 1 tbsp sugar shopping list
- 1/4 cup milk shopping list
- ***Whipped Cream*** shopping list
- 1/2 cup of heavy whipping cream shopping list
- 3 tbsp sugar shopping list
- 1 tsp salt shopping list
How to make it
- Mix all ingredients for pie crust, will be a little crumbly... wrap in plastic and put it in the fridge for at least 30 mins... but can hold up to a few days.
- Clean and cut stems off Strawberries
- Mash strawberries until you have a cup mashed
- In a saucepan, sugar, cornstarch, water and lemon juice, bring to a boil and boil for about a minute (Make sure to keep stirring the whole time)... add mashed strawberries and stir until thickened, take off heat and set aside until cooled (to room temp)
- In a small bowl, beat softened cream cheese until creamy and then stir in lemon zest
- Flour Rolling pin, roll out dough and put in pie pan, crimp edges
- bake pie crust at 425 for 8 to 10 minutes, or until light golden brown
- Add cream cheese mixture to pie crust
- Put all strawberries on top of cream cheese
- pour sugar mixture over the strawberries
- refrigerate for about two hours or more until set
- Make whipped cream and pipe on top..
- ENJOY!!
