How to make it

  • Mix all ingredients for pie crust, will be a little crumbly... wrap in plastic and put it in the fridge for at least 30 mins... but can hold up to a few days.
  • Clean and cut stems off Strawberries
  • Mash strawberries until you have a cup mashed
  • In a saucepan, sugar, cornstarch, water and lemon juice, bring to a boil and boil for about a minute (Make sure to keep stirring the whole time)... add mashed strawberries and stir until thickened, take off heat and set aside until cooled (to room temp)
  • In a small bowl, beat softened cream cheese until creamy and then stir in lemon zest
  • Flour Rolling pin, roll out dough and put in pie pan, crimp edges
  • bake pie crust at 425 for 8 to 10 minutes, or until light golden brown
  • Add cream cheese mixture to pie crust
  • Put all strawberries on top of cream cheese
  • pour sugar mixture over the strawberries
  • refrigerate for about two hours or more until set
  • Make whipped cream and pipe on top..
  • ENJOY!!
