Fresh Sofrito Recipe
Sofrito is a base for most spanish cook but it can be used for more than that. It can season your steaks or pork chops/pork loin, spaghetti sauces, the uses are endless

Ingredients
  • -1 Onion
  • -1 Red Bell Pepper
  • -1 Green Bell Pepper
  • -1 Head of Cilantro
  • -1 Head of cuilantro
  • -1 pack of Ajicito Peppers (hard to find but usually come in a pack of about 12-15 in the produce isle.?
  • -Handful of Garlic Cloves
  • -10 Spanish olives (can be found in the goya Isle) No pits.
  • -8 ounce Jar of Goya Pimientos
  • Black Pepper
  • -Ground Oregano or oregano flakes

Directions
  1. Chop all ingredients to cubes or so they are all small enough to put in a food processor.
  2. You don’t have to put it all in the processor at once. Process a little at a time and I usually put it into a large cooking pot. Make sure its not a paste. It should be like a very finely chopped Salsa in comparison.
  3. When all is processed stir well to make sure all ingredients are evenly distributed.
  4. Season with black pepper and Oregano.
  5. When it’s all done take a smell. its smells great. you can store it in the fridge for about a month and just use some as needed.
  6. But I'm going to give you a little trick. Take some empty ice trays and fill them with the sofrito and cover with plastic wrap. This way you can just pop out a cube or two when you need it instead of cutting a frozen block of sofrito.
