Fresh Sofrito

- -1 onion shopping list
- -1 red bell pepper shopping list
- -1 green bell pepper shopping list
- -1 Head of cilantro shopping list
- -1 Head of cuilantro shopping list
- -1 pack of Ajicito peppers (hard to find but usually come in a pack of about 12-15 in the produce isle.? shopping list
- -Handful of garlic cloves shopping list
- -10 Spanish olives (can be found in the goya Isle) No pits. shopping list
- -8 ounce Jar of Goya pimientos shopping list
- black pepper shopping list
- -ground oregano or oregano flakes shopping list
How to make it
- Chop all ingredients to cubes or so they are all small enough to put in a food processor.
- You don’t have to put it all in the processor at once. Process a little at a time and I usually put it into a large cooking pot. Make sure its not a paste. It should be like a very finely chopped Salsa in comparison.
- When all is processed stir well to make sure all ingredients are evenly distributed.
- Season with black pepper and Oregano.
- When it’s all done take a smell. its smells great. you can store it in the fridge for about a month and just use some as needed.
- But I'm going to give you a little trick. Take some empty ice trays and fill them with the sofrito and cover with plastic wrap. This way you can just pop out a cube or two when you need it instead of cutting a frozen block of sofrito.
