How to make it

  • Chop all ingredients to cubes or so they are all small enough to put in a food processor.
  • You don’t have to put it all in the processor at once. Process a little at a time and I usually put it into a large cooking pot. Make sure its not a paste. It should be like a very finely chopped Salsa in comparison.
  • When all is processed stir well to make sure all ingredients are evenly distributed.
  • Season with black pepper and Oregano.
  • When it’s all done take a smell. its smells great. you can store it in the fridge for about a month and just use some as needed.
  • But I'm going to give you a little trick. Take some empty ice trays and fill them with the sofrito and cover with plastic wrap. This way you can just pop out a cube or two when you need it instead of cutting a frozen block of sofrito.
