Ingredients
  • 1 honey-dew melon (approx. 3 lbs)
  • 100g tapioca pearls (sold in ethnic food stores)
  • 2/3 cup sugar
  • 2 1/2 cups water
  • 1/2 cup coconut milk
  • 1/3 cup evaporated milk

Directions
  1. Cut away 1/3 of the melon from top; remove seeds and lining fibers.
  2. Soak tapioca pearls in piping-hot water (but not boiling) for 30 minutes. Start boiling tapioca pearls until they become transparent.
  3. Put them in a fine sieve and soak in cold water to remove stickiness. Drain and lightly press dry.
  4. Boil 2 1/2 cups of water, add sugar and tapioca pearls and bring to a boil, add coconut milk and evaporated milk and bring to a boil again.
  5. Wait until cool, then pour into melon and place in fridge. Serve chilled.

I had some tapioca last night ( I only drink it) is this what is also known as sago. I often wondered how I could incorporate it into a recipe. Now you have handed me one. Thanks

Alterations


I tried this last night. The alteration came about because I only had a large slice of honey dew in the refridgerator. As I could not wait, I placed bite-size cubes of melon into a couple of attractive dessert glasses and poured the "pearl" mixture over. Covered with plastic wrap and chilled for half an hour. Superb. Thanks
