How to make it

  • Soak lentils for 8 hours or overnight
  • Chop onion and garlic, heat oil in a large saucepan, saute onion until softened, add lentils and curry paste and stir until fragrant. Add water and diced potato and pumpkin and stir to coat then cover and simmer for 15 minutes, add more water if necessary.
  • Stir and simmer for a further 10 minutes or until lentils are tender. Add tomato sauce, coconut cream and salt and pepper to taste.
  • Serve with long grain white rice, with chili sauce

    Would like an idea of how much pumpkin you use. Pumpkins start at maybe 3 inches in diameter. Like 2 cups or ????
