Lentil And Chick-pea Stew

- 1/4 cup brown lentils shopping list
- 1 X 225g can chick peas shopping list
- 2 potatoes, peeled and cubed shopping list
- 1/2 small pumpkin shopping list
- 1 onion, finely chopped shopping list
- 2 cloves garlic, crushed shopping list
- 2 tablespoons curry paste shopping list
- 1 cup coconut cream shopping list
- 1 tbsp tomato sauce shopping list
- 1/2 cup water shopping list
- 1/2 tablespoon vegetable oil shopping list
- salt and pepper to taste shopping list
How to make it
- Soak lentils for 8 hours or overnight
- Chop onion and garlic, heat oil in a large saucepan, saute onion until softened, add lentils and curry paste and stir until fragrant. Add water and diced potato and pumpkin and stir to coat then cover and simmer for 15 minutes, add more water if necessary.
- Stir and simmer for a further 10 minutes or until lentils are tender. Add tomato sauce, coconut cream and salt and pepper to taste.
- Serve with long grain white rice, with chili sauce
