Bourbon Pecan Chicken

- 2 boneless skinless chicken breasts, halved shopping list
- 1/4 cup bourbon shopping list
- 1/2 cup pecans shopping list
- 1/2 cup dry bread crumbs shopping list
- 1/2 cup PLUS 2 tablespoons parmesan cheese shopping list
- 1 large egg, lightly beaten, in a shallow bowl shopping list
- 1 cup clarified butter OR 1/2 cup unsalted butter mixed with 1 cup peanut oil shopping list
- creole seasoning, garlic powder, Old Bay Seasoning ans salt to taste. shopping list
- 1 lemon, cut into 8 wedges shopping list
How to make it
- Flatten breasts to 1/4" thickness.
- Place in shallow glass OR stainless container in 1 layer.
- Pour bourbon over chicken.
- Set aside to marinate for 30 minutes to 1 hour.
- Grind pecans in processor to a coarse meal consistency.
- Transfer to a bowl and mix in bread crumbs and Parmesan cheese.
- Prepare a pie plate with egg and 1 tablespoon water whisked in.
- Prepare another plate with flour.
- Drain marinade from the chicken.
- Roll them in flour, shake off excess and dip into egg.
- Allow egg to drip back into plate.
- Roll chicken in bread crumbs, patting crumbs in well.
- Lay chicken pieces on wire rack.
- Set aside for 15 minutes to set breading.
- Put clarified butter OR unsalted butter and peanut oil into a skillet large enough to hold all the chicken OR use 2 skillets.
- Turn heat to medium high.
- When butter is melted and foam subsides, add chicken to pan(s).
- Fry until bottom is golden, about 3 minutes.
- Turn and continue to fry until chicken is cooked and uniformly browned, about another 3 minutes.
- Serve hot with lemon wedges.
