Ingredients
  • 2 boneless skinless chicken breasts, halved
  • 1/4 cup bourbon
  • 1/2 cup pecans
  • 1/2 cup dry bread crumbs
  • 1/2 cup PLUS 2 tablespoons Parmesan cheese
  • 1 large egg, lightly beaten, in a shallow bowl
  • 1 cup clarified butter OR 1/2 cup unsalted butter mixed with 1 cup peanut oil
  • Creole seasoning, garlic powder, Old Bay seasoning ans salt to taste.
  • 1 lemon, cut into 8 wedges

Directions
  1. Flatten breasts to 1/4" thickness.
  2. Place in shallow glass OR stainless container in 1 layer.
  3. Pour bourbon over chicken.
  4. Set aside to marinate for 30 minutes to 1 hour.
  5. Grind pecans in processor to a coarse meal consistency.
  6. Transfer to a bowl and mix in bread crumbs and Parmesan cheese.
  7. Prepare a pie plate with egg and 1 tablespoon water whisked in.
  8. Prepare another plate with flour.
  9. Drain marinade from the chicken.
  10. Roll them in flour, shake off excess and dip into egg.
  11. Allow egg to drip back into plate.
  12. Roll chicken in bread crumbs, patting crumbs in well.
  13. Lay chicken pieces on wire rack.
  14. Set aside for 15 minutes to set breading.
  15. Put clarified butter OR unsalted butter and peanut oil into a skillet large enough to hold all the chicken OR use 2 skillets.
  16. Turn heat to medium high.
  17. When butter is melted and foam subsides, add chicken to pan(s).
  18. Fry until bottom is golden, about 3 minutes.
  19. Turn and continue to fry until chicken is cooked and uniformly browned, about another 3 minutes.
  20. Serve hot with lemon wedges.
