Love anything margarita! LOL This one is packed with flavor and super easy! Fix a pitcher of margaritas to drink while you visit with your guests on the deck and grill these kabobs! Always a big hit!

Ingredients
  • 1 1/4 lbs boneles skinless chicken, breast halves or thighs
  • 1 large red onion, cut into wedges
  • 1 large red or green bell pepper, cut into bite size pieces
  • 1 c orange marmalade
  • 1/3 c fresh squeezed lime juice
  • 1/4 c tequila (optional)
  • 2 T snipped fresh cilantro
  • 2 T olive oil
  • 1 t minced garlic (2 cloves)
  • 6 1/2 inche slices peeled fresh pineapple

Directions
  1. Cut chicken into 1-inch pieces
  2. On long metal skewwers, altherantely thread chicken, pepper, and onion, leaving a 1/4-inch space between pieces
  3. In a small saucepan, stir together marmalade, lime juice, tequila, cilantro, oil and garlic
  4. Cook and stir just until marmalade melts
  5. CHARCOAL GRILL:
  6. Grill kabobs directly over medium coals for 10-12 minutes or until chicken is no longer pink, (170), turning once, halfway through grilling
  7. After 5minutes of grilling, add pineapple to grill rack
  8. Turn pineapple once and brush pineapple and chicken once with sauce during last 3 minutes of grilling
  9. GAS GRILL
  10. preheat grill, reduce heat to medium
  11. Place kabobs and pineapple on grill rack over heat
  12. Cover, and grill as above
  13. TO SERVE
  14. reheat suace until bubbly, pass with kabobs and pineapple
