How to make it

  • Cut chicken into 1-inch pieces
  • On long metal skewwers, altherantely thread chicken, pepper, and onion, leaving a 1/4-inch space between pieces
  • In a small saucepan, stir together marmalade, lime juice, tequila, cilantro, oil and garlic
  • Cook and stir just until marmalade melts
  • CHARCOAL GRILL:
  • Grill kabobs directly over medium coals for 10-12 minutes or until chicken is no longer pink, (170), turning once, halfway through grilling
  • After 5minutes of grilling, add pineapple to grill rack
  • Turn pineapple once and brush pineapple and chicken once with sauce during last 3 minutes of grilling
  • GAS GRILL
  • preheat grill, reduce heat to medium
  • Place kabobs and pineapple on grill rack over heat
  • Cover, and grill as above
  • TO SERVE
  • reheat suace until bubbly, pass with kabobs and pineapple
