Margarita Kabobs

- 1 1/4 lbs boneles skinless chicken, breast halves or thighs shopping list
- 1 large red onion, cut into wedges shopping list
- 1 large red or green bell pepper, cut into bite size pieces shopping list
- 1 c orange marmalade shopping list
- 1/3 c fresh squeezed lime juice shopping list
- 1/4 c tequila (optional) shopping list
- 2 T snipped fresh cilantro shopping list
- 2 T olive oil shopping list
- 1 t minced garlic (2 cloves) shopping list
- 6 1/2 inche slices peeled fresh pineapple shopping list
How to make it
- Cut chicken into 1-inch pieces
- On long metal skewwers, altherantely thread chicken, pepper, and onion, leaving a 1/4-inch space between pieces
- In a small saucepan, stir together marmalade, lime juice, tequila, cilantro, oil and garlic
- Cook and stir just until marmalade melts
- CHARCOAL GRILL:
- Grill kabobs directly over medium coals for 10-12 minutes or until chicken is no longer pink, (170), turning once, halfway through grilling
- After 5minutes of grilling, add pineapple to grill rack
- Turn pineapple once and brush pineapple and chicken once with sauce during last 3 minutes of grilling
- GAS GRILL
- preheat grill, reduce heat to medium
- Place kabobs and pineapple on grill rack over heat
- Cover, and grill as above
- TO SERVE
- reheat suace until bubbly, pass with kabobs and pineapple
