How to make it

  • Cook instant rice and set aside.
  • Add enough oil to almost cover bottom of skillet.
  • Add salt/pepper and chicken and saute until cooked (approx 15-18 minutes).
  • Add green pepper,green onion and bagged veggies and continue to saute for 10-15 more minutes over medium heat.
  • Scoop out marmalade into small sauce pan and add reserved pineapple juice,bring to low boil,then reducing to low heat and whisk in 3-4 tsp.corn starch to slightly thicken.
  • Stir pineapple chunks into warmed glaze then pour over chicken.
  • Stir all ingredients together and thoroughly warm for 5-8 minutes until glaze is nice and thick..
  • Serve over cooked rice.
  • YUM!!!
