How to make it

  • Combine parmesan cheese, flour, and red pepper; cut in butter with a pastry blender until mixture resembles coarse meal.
  • Sprinkle cold water (1 tbls at a time) evenly over surface; stir with a fork until dry ingredients are moistened.
  • Shape dough into 1 1/2 inch thick log and set aside.
  • Combine walnuts and parsley in a shallow pan; roll log in mixture to coat evenly.
  • Cut log with a serrated knife into 1/4 inch slices; place on ungreased baking sheet.
  • Bake at 375 for 12 minutes or until lightly browned; cool on a wire rack.
  • Store crackers in a tightly covered container.
  • These crackers will freeze well. Yield is 2 dozen.
