Ingredients
  • 500gm - boiled and peeled potatoes
  • 1/2 cup - sagu (sabudana)
  • 4 green chillies chopped
  • 1/2 cup - chopped green coriander leaves
  • 25gm - peeled chopped ginger
  • 1 large onion finely chopped
  • 2 tbsp peanut (with the skin removed) ground coarsely
  • 1 tsp dry mango powder (amchur)
  • 1 tsp garam masala
  • 1/2 cup ghee (or oil)
  • salt to taste

Directions
  1. Mash the potatoes and mix with all ingredients. Take care not to mash too much, the texture should be somewhat coarse.
  2. Take a morsel size of the mix and make small round (about 1-1/2").
  3. Press the ball between your palms to make it flat (to about a bread slice thickness)
  4. Keep on a plate and repeat to make several round flats.
  5. Heat the frying pan on medium flame and pour some ghee (or oil).
  6. Put the vadas on the pan and fry them by pouring small quantity of ghee around occasionally.
  7. Turn the vadas a few number of times till cooked thoroughly.
  8. Serve hot with any chutney (or ketchup) of your choice. Garnish with coriander leaves.
