This is my favorite jam. I love the tangy sweet flavor and bright color. Recipe from MCP Pectin.

Ingredients
  • 3 cups apricots ; pitted and chopped
  • 20 ounces crushed pineapple in juice
  • 1/2 cup lemon juice
  • 1 package pectin
  • 1/2 teaspoon butter
  • 8 cups sugar

Directions
  1. Measure apricots into 6-8 qt. saucepot.
  2. Add pineapple and lemon juice.
  3. Stir pectin into fruit mixture.
  4. Bring mixture to a full rolling boil, stirring constantly.
  5. Add butter.
  6. Stir in sugar quickly.
  7. Bring back to a rolling boil and boil exactly 4 minutes, stirring constantly.
  8. Remove from heat.
  9. Ladle into prepared jars, filling to within 1/8 inch of tops.
  10. Wipe jar rims and threads.
  11. Cover with two piece lids. Screw bands tightly.
  12. Invert onto a clean towel.
  13. After 5 minutes, turn upright, check for seals.
  14. Makes about 9 cups of jam.
