Grilled Red Onions Recipe

Ingredients

2 pounds red onions

1/2 cup fresh parsley, chopped

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 1/2 teaspoon fresh rosemary, chopped

1 clove garlic, minced

salt and pepper

Directions

Heat vinegar, garlic and rosemary in a sauce pan until hot. Don't boil.

Let stand 20 minutes.

Warm oil in a separate pan.

Slice onions into 1/2 inch slices. Lay out on a cookie sheet and brush both sides with oil.

Sprinkle salt and pepper over onions.

Grill over medium heat for 4-6 minutes.

Let the onion slices slightly char.

Remove from grill and separate into rings.

Toss with vinegar mixture and parsley.
