Ingredients
  • 2 tablespoons flour
  • 1.5 lbs chuck steak, cubed
  • 1/4 cup olive oil
  • 2 celery sticks, chopped
  • 1 medium onion, chopped
  • 2 carrots, peeled, chopped
  • 3/4 c mushrooms, chopped
  • 2 tablespoons tomato paste
  • 1 can Guinness beer
  • 1.5 cups beef stock
  • 2 bay leaves
  • 1/2 cup flat-leaf parsley leaves, finely chopped

Directions
  1. Coat steak with flour and salt to coat.
  2. Heat 2 tablespoons oil in a saucepan over medium heat.
  3. Brown steak and transfer to a plate.
  4. Heat remaining oil in saucepan over medium heat. Add celery, onion, carrot and mushrooms. Cook for 5 minutes or until tender.
  5. Add tomato paste. Gradually stir in Guinness beer.
  6. Add stock and bay leaves. Bring to the boil and reduce heat to low. Return steak and any juices to pan. Cover and simmer for 1 hour.
  7. Remove lid and simmer for 30 minutes or until steak is tender.
  8. Remove bay leaves. Stir in parsley. Season with salt and pepper.
  9. Serve with crusty bread, or mash potatoes and salad
