Beef Vegetable Stew With Guinness Beer

- 2 tablespoons flour shopping list
- 1.5 lbs chuck steak, cubed shopping list
- 1/4 cup olive oil shopping list
- 2 celery sticks, chopped shopping list
- 1 medium onion, chopped shopping list
- 2 carrots, peeled, chopped shopping list
- 3/4 c mushrooms, chopped shopping list
- 2 tablespoons tomato paste shopping list
- 1 can Guinness beer shopping list
- 1.5 cups beef stock shopping list
- 2 bay leaves shopping list
- 1/2 cup flat-leaf parsley leaves, finely chopped shopping list
How to make it
- Coat steak with flour and salt to coat.
- Heat 2 tablespoons oil in a saucepan over medium heat.
- Brown steak and transfer to a plate.
- Heat remaining oil in saucepan over medium heat. Add celery, onion, carrot and mushrooms. Cook for 5 minutes or until tender.
- Add tomato paste. Gradually stir in Guinness beer.
- Add stock and bay leaves. Bring to the boil and reduce heat to low. Return steak and any juices to pan. Cover and simmer for 1 hour.
- Remove lid and simmer for 30 minutes or until steak is tender.
- Remove bay leaves. Stir in parsley. Season with salt and pepper.
- Serve with crusty bread, or mash potatoes and salad
