Fresh Fruit Crepes Recipe
This is a healthy version of the normal crepes instead of fruit compote it has fresh fruit which is always better.

Ingredients
  • Fruit topping
  • 1/4 cup of brown sugar
  • juice of 1 lime
  • 2 cups sliced fresh strawberries
  • 1/4 cup of fresh blueberries
  • Crepes
  • 1 cup of low fat ricotta cheese
  • 2 tblspn brown sugar
  • 1/2 tspn cinnamon
  • 6 (6-inch) flour tortillas
  • 2 tspn margarine

Directions
  1. Combine brown sugar and lime juice with strawberries and blueberries in a small bowl. stir it dissolve and set aside.
  2. To prepare crepes, combine ricotta, brown sugar, and cinnamon in a small bowl.
  3. spoon and even amount of mixture on one side of the tortilla:fold over to enclose. i personally put mixture on both sides because its sooo good. if so you might want to double ingredients
  4. melt 1 teaspoon margarine in a large skillet over MEDIUM heat. place 3 of the filled tortillas in the skillet, and cook for several minutes on each side until crisp and lightly browned.
  5. repeat with remaining margarine and tortillas
  6. spoon fruit topping over crepes and serve while hot with a nice glass of orange juice
