Mexican Bread Pudding Capirotada Recipe

Ingredients
  • 3/4 cup firmly packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup water
  • 1 teaspoon orange zest
  • 2 1/2 cups two day old french bread, cut into 1/2 inch cubes
  • 1 cup raisins
  • 3/4 cup chopped walnuts
  • 1/2 cup diced cheddar cheese
  • butter flavored cooking spray
  • Sweetened whipped cream or vanilla ice cream

Directions
  1. In a pan combine brown sugar, cinnamon and water
  2. Boil gently until sugar is dissolved
  3. Add orange zest
  4. Pour the hot syrup over bread cubes and toss gently
  5. Add raisins, walnuts and cheese
  6. Toss again until mixed in
  7. Spoon into a 1 1/2 quart casserole sprayed with cooking spray
  8. Let stand at least 20 minutes
  9. Bake in 350 degree oven for about 15 minutes or until heated through
  10. Serve warm with whipped cream or vanilla ice cream
