Crunchie Rusks Recipe
A GOOD SOUTH AFRICAN RUSK FOR COFFEE (fairly hard so need a good set of teeth) ha ha only kidding great dunkers or for teething babies to chew on

Ingredients
  • 1 kg Self Raising Flour - 2lbs
  • 1 cup White Sugar
  • 1tsp Baking Powder
  • 250g Butter melted - 1/2lb
  • 2 Eggs Beaten
  • 500mls Buttermilk - 1 pint
  • (can use regular milk add 2 Tsp lemon juice and let stand for 10 minutes)
  • Raisins
  • Sunflower seeds
  • Cherries

Directions
  1. Mix dry ingredients together
  2. Pour in milk, egg and butter
  3. Mix (need a bit of strength here, so those of you with smaller children you will need to help them)
  4. Grease a grilling pan
  5. pat mix into pan till even
  6. Bake 180C for half an hour
  7. Remove and cut into rusks (I use my electric knife)
  8. Reduce heat to 100C
  9. Place rusks on baking sheets and dry out for 4 hours in the oven
  10. Enjoy
