Mediterranean Braised Beef

                    - 2 ½ - 3 LB. boneless beef chuck shoulder pot roast. shopping list
- ½ cup all-purpose flour shopping list
- 3 Tbsp. olive oil shopping list
- 2 cups water shopping list
- ¼ cup balsamic vinegar shopping list
- 1 medium sized onion halved and sliced in fairly thick slices shopping list
- ¼ cup pitted Italian prunes in syrup. Save the syrup shopping list
- (Note: I use the small 8.5 oz. size) You can also use chopped dates. shopping list
- salt, pepper to taste shopping list
- Add other seasonings if you wish, I just kept it simple.. shopping list
How to make it 
                    - NOTE: You can also slow cook it on top of the stove covered with a tight fitting lid like I did or....
- Heat oven to 325 degrees
- Heat the olive oil until hot in a deep oven proof skillet.
- Flour the roast and fry in the oil until nicely browned on both sides
- Remove the roast and add the water and the vinegar, scraping the brown bits loose from the bottom of the skillet.
- Place the roast back into the skillet with the onions and prunes and about 4 oz. of the syrup from the prunes. Add salt, pepper and seasonings
- Cover tightly and cook for about 3 hours or until the roast is fork tender.
- Remove the roast and keep it warm.
- Over med/high heat the sauce until it reaches a consistency you like…if it is already too thick just add a little water.
- Carve the roast and serve with the sauce.
 Ready for the slow cooking time.
