How to make it

  • NOTE: You can also slow cook it on top of the stove covered with a tight fitting lid like I did or....
  • Heat oven to 325 degrees
  • Heat the olive oil until hot in a deep oven proof skillet.
  • Flour the roast and fry in the oil until nicely browned on both sides
  • Remove the roast and add the water and the vinegar, scraping the brown bits loose from the bottom of the skillet.
  • Place the roast back into the skillet with the onions and prunes and about 4 oz. of the syrup from the prunes. Add salt, pepper and seasonings
  • Cover tightly and cook for about 3 hours or until the roast is fork tender.
  • Remove the roast and keep it warm.
  • Over med/high heat the sauce until it reaches a consistency you like…if it is already too thick just add a little water.
  • Carve the roast and serve with the sauce.
Ready for the slow cooking time.   Close
