Halibut With Macadamia Nut Crust Recipe
This is an easy fish recipe that I make quite often and one of the few my husband will eat!

Ingredients
  • 4 (6 ounce) halibut filets
  • 1 cup macadamia nuts
  • 1 tablespoon olive oil
  • 1/8 teaspoon dried thyme
  • lemon wedges

Directions
  1. Preheat oven to 450 degrees. Pat fish dry. Finely grind 3/4 cup nuts in food processor, add olive oil and thyme and combine. Spread nut mixture over the top of filets.
  2. Place filets in a broiler-safe baking dish and bake, uncovered, 10-12 minutes, or until centers are cooked through. Meanwhile, coarsely chop the remaining nuts. Remove fish from oven and turn on broiler. Top fish with coarse chopped nuts and place under broiler to brown, about 1 minute, watch carefully. Serve with lemon wedges.
