Salmon Pasta Salad A La Northwest Recipe
This is my signature pasta salad that I developed from leftover salmon fillets. Everyone raves and wants the recipe.

Ingredients
  • 3/4 lb. cooked salmon fillet, flaked into 1" pieces
  • 8 oz. rotini pasta, cooked and drained
  • 1 smaller cucumber, peeled, seeded and diced
  • 1 green onion, thinly sliced (optional)
  • 1/3 cup mayonnaise
  • 3 Tbps. buttermilk or plain yogurt
  • 1 Tbsp. lemon juice
  • 1 teas. lemon zest
  • 2 Tbsp. chopped fresh dill weed
  • 2 tsp. chopped chives
  • Salt & Pepper to taste

Directions
  1. In a small bowl, combine mayonnaise, sour cream (or yogurt), lemon juice, lemon zest, dill, chives, salt and pepper. Whisk until well combined.
  2. In a larger salad bowl, combine salmon, pasta, cucumber and green onion. Stir together gently so the salmon remains in chunks. Add dressing and stir together again. Place in fridge and allow to chill 2 hours.

Oh, wow! Salmon AND pasta! Two all-time favs! I bet it would be great with smoked salmon, too! I love to do salmon in my stovetop smoker, and PLAN for leftovers! Great recipe, Val!
