Antipasti Salad

- 5 cups chopped romaine lettuce shopping list
- 5 cups chopped Green head lettuce shopping list
- 1/2 green and red pepper, cut in julienne strips shopping list
- 3 green onions, thinly sliced shopping list
- 1 box cherry tomatoes, cut in halves shopping list
- 1 cup kalamata olives, seeds removed, cut in halves shopping list
- 15 oz. can garbanzo beans, drained shopping list
- 15 oz. can artichoke hearts, drained and quartered shopping list
- 5 string cheese (Mozzarella) cut in 1/4" slices (do not string) shopping list
- 3 oz. sliced Italian dry salami, cut in quarters shopping list
- 2 oz. sliced pepperoni, cut in quarters shopping list
- 2/3 cup extra virgin olive oil shopping list
- 1/3 cup red wine vinegar or balsamic shopping list
- 3 Tbsp. sliced fresh basil or 1 Tbsp. dried Italian seasoning shopping list
- 1 garlic clove, minced shopping list
- 1/2 teas. salt shopping list
- 1/4 teas. pepper shopping list
- Grated parmesan cheese, for garnish shopping list
How to make it
- In a large salad bowl combine the the first 11 ingredients. Then combine olive oil, vinegar, basil or Italian Seasoning, garlic, salt and pepper. Whisk thoroughly to combine flavors. Pour over salad and toss. Sprinkle top with grated Paremesan cheese.
- This salad is a meal in itself but works wonderfully as a side salad for spaghetti or lasagna.
