Antipasti Salad Recipe
Wonderful Italian salad - perfect for hot summer days. This is my version - but as you can see - just about anything works!

Ingredients
  • 5 cups chopped Romaine lettuce
  • 5 cups chopped Green head lettuce
  • 1/2 green and red pepper, cut in julienne strips
  • 3 green onions, thinly sliced
  • 1 box cherry tomatoes, cut in halves
  • 1 cup kalamata olives, seeds removed, cut in halves
  • 15 oz. can garbanzo beans, drained
  • 15 oz. can artichoke hearts, drained and quartered
  • 5 string cheese (Mozzarella) cut in 1/4" slices (do not string)
  • 3 oz. sliced Italian dry salami, cut in quarters
  • 2 oz. sliced pepperoni, cut in quarters
  • 2/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar or balsamic
  • 3 Tbsp. sliced fresh basil or 1 Tbsp. dried Italian Seasoning
  • 1 garlic clove, minced
  • 1/2 teas. salt
  • 1/4 teas. pepper
  • Grated Parmesan cheese, for garnish

Directions
  1. In a large salad bowl combine the the first 11 ingredients. Then combine olive oil, vinegar, basil or Italian Seasoning, garlic, salt and pepper. Whisk thoroughly to combine flavors. Pour over salad and toss. Sprinkle top with grated Paremesan cheese.
  2. This salad is a meal in itself but works wonderfully as a side salad for spaghetti or lasagna.
