Columbia 1905 Salad Recipe
The venerable Columbia has a house salad that my mom used to serve us many a hot summer night. It is cool and the salad made sure we got our quotient of veggies.

Ingredients
  • 1 large head of iceberg lettuce, washed chilled
  • some tender inner leaves of romaine chopped (1 head)
  • 1 can of beets, sliced and drained chilled
  • 1 can of yellow wax beans, drained chilled
  • 1 can of tiny (LeSuer Peas) chilled and drained
  • 2 tomatoes cut in wedges, 4 per salad
  • 3 hard cooked eggs, quartered, 3 per salad
  • 1 green or yellow pepper slivered in rings
  • 1/2 of a yellow onion slivered and soaked in ice water for 20 minutes
  • 2 to 3 slices of deli ham, cut in fine dice
  • 2 to 3 slices of swiss cheese cut in fine dice
  • handful of pitted black olives
  • sprinkling of capers
  • anchovies if desired
  • Thousand Island dressing (homemade is best)
  • 1/3 cup of catsup
  • 2/3 cup of good quality mayonnaise
  • 2 dashes of worchestershire
  • 1 tbsp of sugar (or one pack of Splenda)
  • 1/4 tsp of black ground pepper
  • Chopped green olives as much as you like (1/8 cup)
  • chopped sweet pickle relish (1/8 cup)
  • squeeze of lemon juice

Directions
  1. Chill all ingredients for one hour.
  2. Assemble salad:
  3. Torn iceberg lettuce and romaine on the bottom of a large bowl.
  4. (or in four individual bowls)
  5. Top in layers with cubed ham and swiss.
  6. Then onions and sliced peppers.
  7. top with tiny peas.
  8. Top with slices of beets and piles of yellow was beans.
  9. Arrange tomatoes and egg quarters decoratively.
  10. Sprinkle with capers over all.
  11. Arrange a few black olives over all.
  12. Top egg pieces with whole anchovies.
  13. Serve with Thousand drssing on the side for guests to dress as they desire.
  14. Chilled cold composed salad with a great combo of flavors.
