How to make it

  • Chop white and green parts of onions leaving green parts in 3 inch pieces
  • Heat 2 tbs oil in a large skillet over high heat
  • Add sliced onions and peppers and cook and stir 7 minutes until onions browned a bit -yet still a bit crunchy
  • Transfer to a bowl
  • To skillet add 1 Tbs oil add, chicken and brown on all sides about 15 minutes
  • Add to onions
  • Add remianing oil to skillet and cook garlic and green onions over med low heat and saute a minutes or so.
  • Add soy and stock and bring to a boil
  • Return chicken and onions to skillet.
  • Reduce heat and simmer covered about 10 minutes.
  • Add mint leaves.
  • Taste and add more soy sauce if needed.
  • Serve over hot cooked rice
