Thai Chicken with Mint

- 4 green onions shopping list
- 4 Tbs oil shopping list
- 1 large onion, halved and sliced into thin rings shopping list
- 2 fresh jalepeno - serrano peppers seeded and halved lenghtwise shopping list
- 4 chicken leg quarters shopping list
- 4 galric cloves minced shopping list
- 1/2 cup chicken stock shopping list
- 2 Tbs soy sauce or to taste shopping list
- 1 cup fresh whole mint leaves shopping list
- Hot cooked rice shopping list
How to make it
- Chop white and green parts of onions leaving green parts in 3 inch pieces
- Heat 2 tbs oil in a large skillet over high heat
- Add sliced onions and peppers and cook and stir 7 minutes until onions browned a bit -yet still a bit crunchy
- Transfer to a bowl
- To skillet add 1 Tbs oil add, chicken and brown on all sides about 15 minutes
- Add to onions
- Add remianing oil to skillet and cook garlic and green onions over med low heat and saute a minutes or so.
- Add soy and stock and bring to a boil
- Return chicken and onions to skillet.
- Reduce heat and simmer covered about 10 minutes.
- Add mint leaves.
- Taste and add more soy sauce if needed.
- Serve over hot cooked rice
