Thai Chicken With Mint Recipe

Ingredients
  • 4 green onions
  • 4 Tbs oil
  • 1 large onion, halved and sliced into thin rings
  • 2 fresh jalepeno - serrano peppers seeded and halved lenghtwise
  • 4 chicken leg quarters
  • 4 galric cloves minced
  • 1/2 cup chicken stock
  • 2 Tbs soy sauce or to taste
  • 1 cup fresh whole mint leaves
  • Hot cooked rice

Directions
  1. Chop white and green parts of onions leaving green parts in 3 inch pieces
  2. Heat 2 tbs oil in a large skillet over high heat
  3. Add sliced onions and peppers and cook and stir 7 minutes until onions browned a bit -yet still a bit crunchy
  4. Transfer to a bowl
  5. To skillet add 1 Tbs oil add, chicken and brown on all sides about 15 minutes
  6. Add to onions
  7. Add remianing oil to skillet and cook garlic and green onions over med low heat and saute a minutes or so.
  8. Add soy and stock and bring to a boil
  9. Return chicken and onions to skillet.
  10. Reduce heat and simmer covered about 10 minutes.
  11. Add mint leaves.
  12. Taste and add more soy sauce if needed.
  13. Serve over hot cooked rice

Interesting recipe with the addition of mint! I'll have to try this soon, we have mint growing wild all over our yard!
