Apple Bacon And Spinach Salad Recipe
A super spinach salad combo. This is a perfect full course salad for 2 or a side salad for 4. Serve with some wonderful warm wheat rolls and everyone will want more!

Ingredients
  • 6 slices bacon, cooked crispy, drained - save 1/2 of the bacon drippings
  • 1 bag of baby spinach, thoroughly washed & spun dry
  • 1 honey crisp apple, cored and sliced into thin wedges
  • 1/4 cup finely diced red onion
  • 1/4 cup sliced fresh mushrooms (shitakes work great)
  • 2 teas. Dijon mustard
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. honey
  • 3 Tbsp. extra virgin olive oil

Directions
  1. Rinse apple slices with a little water mixed with lemon juice to keep them from turning dark, drain. Combine apples, spinach and 4 slices of bacon, crumbled, in a salad bowl.
  2. In pan with reserved bacon drippings, turn to medium heat - when hot add onions and mushrooms, Cook until onion is barely tender. Remove from heat and add remaining 2 slices of bacon, crumbled. Stir to combine. Pour into a heatproof bowl. Add vinegar,Dijon mustard, honey and olive oil. Whisk to combine and lightly dress spinach-apple mixture. Toss and serve.
