Gluten Free Low Fat Apple Cake Recipe

This is a moist, crunchy GLUTEN FREE, low fat dessert with an unbelievable ingredient.

Ingredients
- 1 large Granny Smith apple, peeled, diced and tossed with lemon
- juice and cold water.
- 2/3 C. raisins soaked in hot water and drained when softened
- Juice of 1 lemon
- 1 1/4 C. finely ground almonds
- 1 C. Gluten Free Baking Mix substitute
- 1 1/4 tsp. GF baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 Tblsp. ground cinnamon
- 3 large eggs
- 3/4 C. sugar
- 2 C. Sweet Potato (not yam), peeled and grated
- 2 tsp. vanilla extract
- 1 tsp. rum flavoring
Directions
- Preheat oven to 350 degrees.
- Spray 8 inch springform pan and cut parchment of bottom
- Peel, core and dice apple into 1/4" cubes. Toss with lemon juice and water.
- Combine dry ingredients in bowl and set aside.
- Using mixer, combine sugar and eggs and beat for 3-5 min. or until tripled in volume and light yellow.
- Peel and grate sweet potato (2 C.) and add to egg/sugar mix and combine.
- Add dry ingredients and incorporate well.
- Fold in drained apples, raisins and flavorings.
- Pour batter in pan and smooth.
- Bake 30 minutes uncovered, cover with foil and bake an additional 30 min. Test with knife in center.
- Cool on wire rack, plate and glaze with powdered sugar and lemon juice glaze. Drizzle glaze on cake so it drips down the sides.
