  • 1 egg
  • 3-tbspn cold water
  • 2-tbspn peanut oil
  • 1/2 tspn salt
  • 1-cup all purpose flour
  • 1 chicken fryer, quartered
  • Additional 1-tspn salt
  • 5-cups chicken stock
  • 2-cups water
  • 2 stalks celery
  • 1 onion, peeled and halved
  • 2-tbsn cold butter
  • 1/4-cup whipping cream
  • Ground black pepper

Directions
  1. In a medium bowl whisk together egg, cold water, oil, and the 1-2-tspn salt.
  2. Stir in flour.
  3. Mix until well-blended and elastic.
  4. Cover.
  5. Refrgerate for 2 hours.
  6. Season chicken, including back and neck, with the 1-tspn salt.
  7. Set aside.
  8. In a large Dutch oven combine chicken stock, water, celery, onion, and pinkch of salt.
  9. Bring ot a boil.
  10. Add chicken pieces, placing leg quaters and backbone first.
  11. Place breast, skin side down, on top.
  12. Redcue heat to just below simmer.
  13. Cover, leaving half-inch opening.
  14. Cook 45 minutes or until breasts are just done; remove.
  15. Continue cooking leg quarters an addtional 40 minutes until tender.
  16. Remove chicen and vegetables.
  17. Set broth in pot aside.
  18. Discard vegetables.
  19. Set chicken aside.
  20. Cool.
  21. Remove skin.
  22. Pull meat from bones, tearing unti large pieces.
  23. Set aside.
  24. Discard bones.
  25. For dumplings, turn dough onto well-floured sufrace.
  26. Roll very thin, about 1/16-inch; cut into 1 1/2 by 2 1/2 inch pieces. Return broth to boiling.
  27. Season well with asdditional salt.
  28. Add dumplings to broth, shaking pot occsionally.
  29. Do not stir.
  30. Cook 3-5 minutes.
  31. Add reserved chicken.
  32. Reduce t o simmer.
  33. Add butter, cream, and few grindings of black pepper.
  34. Remove from heat; cover.
  35. Let stand 10 minutes.

Susana, this is great...and a very nice Mother's Day remembrance for your grandmother. I've always loved our southern 'slick' dumplings, but have never gotten them to turn out like my grandma's did. Gave it a 5 rating for the wonderful memories! I will definitely give this recipe a try and let you know how it came out. Thanks a bunch!
