Lemon Cream Cupcakes Recipe
I found this recipe in Taste of Home about a year ago and tweaked it a little. It has gotten me rave reviews.

Ingredients
  • 1 cup butter-softened
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons grated lemon peel
  • juice of 2 lemons
  • 1 teaspoon vanilla extract
  • 3 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sour cream
  • Frosting:
  • 1/4 cup butter-softened
  • 1 8oz package cream cheese-softened
  • 1 teaspoon lemon extract
  • 1 teaspoon finely grated lemon peel
  • 4 cups sifted powdered sugar

Directions
  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Beat in lemon peel, juice, and vanilla.
  4. Combine flour, baking soda, baking powder, and salt. Add to butter mixture alternatively with sour cream beginning and ending with flour.
  5. Beat well after each addition. Batter will be thick.
  6. Place cupcake liners into two regular sized muffin pans.
  7. Fill cups about halfway with batter. Bake at 350 degrees for 25-30 minutes or until inserted toothpick comes out clean.
  8. Cool in pan for 10 minutes then turn cupcakes out onto wire rack to cool completely.
  9. Frosting:
  10. In a large mixing bowl, combine butter and cream cheese. Beat on high speed until creamy.
  11. Add extract and lemon peel. Continue beating.
  12. Turn mixer down and gradually add sugar. When all is incorporated, turn mixer back to high and beat until smooth and spreadable.
  13. Frost cupcakes.
