How to make it

  • Bring water to a boil over high heat with a teaspoon of salt.
  • While water is coming to a boil, heat 1 tbs of olive oil n a medium saucepan and begin to melt pesto jack cheese.
  • Whisk together quickly.
  • When cheese is melted, quickly add Alfredo sauce.
  • Continue to whisk occasionally until the sauce comes to a slight simmer. Turn off heat. Water should be boiling by now so add spinach pasta to the water.
  • Boil pasta for 3-5 minutes and drain.
  • Return to pot and transfer sauce from saucepan to pot, mixing with pasta.
  • Fold in Parmesan cheese and remaining salt and place pot on very low heat.
  • Put the saucepan back on medium high heat with remaining sauce and add remaining olive oil.
  • Saute shrimp in oil and remaining sauce. Remember to fold he pasta so it doesn't burn over heat.
  • When all the shrimp turns pink, serve over pasta.
  • Eat. Goes great with salad (see my Orange vinaigrette salad)
