sesame honey and oats bread

- 1/2 cup oats shopping list
- 3/4 cup boiling water shopping list
- 2 tsp dry yeast shopping list
- 1 tsp sugar shopping list
- 1/2 cup warm water (body temperature) shopping list
- 1/4 cup toasted sesame seeds shopping list
- 2 Tbsp honey shopping list
- 1/2 tsp salt shopping list
- 2 cups wholemeal flour shopping list
- 1 cup plain flour (or all wholemeal, or you can even use a little rye if you like...i did) shopping list
How to make it
- in a big bowl, combine the oats and boiling water. Let stand 15 minutes.
- In a small bowl, combine the yeast, sugar and warm water. Let stand 10 minutes, til foamy.
- (you can toast you sesame seeds while you wait, just in a frypan over medium heat, watch them though, cause they turn quickly)
- Add sesame seeds, honey and salt to oats. Stir in the yeast mixture.
- Add the flours, one cup at a time until well combined.
- Turn out the dough and knead for 10 minutes or so.
- Place the dough in an oiled bowl, toss a bit to coat the dough with oil from the bowl, cover with plastic wrap and leave to rise. (about an hour, until its doubled).
- Punch down the dough, knead a little more, shape into a loaf, place in a lined tin, cover and let rise for another 45 minutes to an hour (until doubled)
- Bake in a preheated oven at 190C (375F) for 35 minutes.
- cool on a wire rack.
