This is a great salad for summer cooking.

Ingredients
  • 1 cup orzo
  • 1/3 cup olive oil
  • 2 tsp. balsamic vinegar plus additional to taste
  • 2 tomatoes, seeded and diced
  • 2 cups arugula, chopped
  • 1/4 cup basil, chopped
  • 1/4 cup pine nuts, lightly toasted
  • Salt and pepper to taste

Directions
  1. Cook orzo according to package directions
  2. In mixing bowl, add orzo, oil and balsamic vinegar and mix
  3. Cool to room temp.
  4. Stir in tomato, arugula, basil, pine nuts and salt and pepper
  5. Add additional balsamic vinegar if desired

I absolutely would like this dish. btw, my experience with orzo says to CHILL it thoroughly before mixing it with the other ingredients. It keeps its texture much better, doesn't crumble or dissolve nearly as much.
