Orzo with Tomatoes and Arugula

- 1 cup orzo shopping list
- 1/3 cup olive oil shopping list
- 2 tsp. balsamic vinegar plus additional to taste shopping list
- 2 tomatoes, seeded and diced shopping list
- 2 cups arugula, chopped shopping list
- 1/4 cup basil, chopped shopping list
- 1/4 cup pine nuts, lightly toasted shopping list
- salt and pepper to taste shopping list
How to make it
- Cook orzo according to package directions
- In mixing bowl, add orzo, oil and balsamic vinegar and mix
- Cool to room temp.
- Stir in tomato, arugula, basil, pine nuts and salt and pepper
- Add additional balsamic vinegar if desired

I absolutely would like this dish. btw, my experience with orzo says to CHILL it thoroughly before mixing it with the other ingredients. It keeps its texture much better, doesn't crumble or dissolve nearly as much.
