Idly Curry Leaf Powder Recipe
This powder is traditionally eaten with the steamed rice cakes called Idly. You can also mix it with plain cooked rice for a tasty snack of main course side.

Ingredients
  • 1-2 tsp of vegetable oil
  • 4-5 red chillies
  • 1/2 cup dry urad dhal
  • 1/2 cup of dry chana dhal
  • 1/2 tsp. of fennagreek seeds
  • 1/2 tsp. of mustard seeds
  • 1/2 tsp. of cumin seeds
  • 2-3 cups of dried curry leaves
  • key lime size ball of dried tamarind

Directions
  1. Heat the vegetable oil in a wok or large skillet.
  2. Add urad dhal, chana dhal, fenagreek seedsm mustard seeds, cumin seeds, roast until mustard seeds start to sputter and pop and urad dhal is golden brown.
  3. Then add tamarind, red chillies and dried curry leaves and roast until the chana dhal is a golden brown.
  4. Then remove from heat and set aside until cool to touch. Then grind until a smooth powder.
